Mercantile - Ming's advice is good for most tricks you see in someone else's posts; I've learned a lot by editing posts made by other people.
For your specific question, though, I think the answer won't be apparent from editing. To delete those portions of a post you don't want to quote, you can either just move the cursor there and delete them with the delete key, or select (either by click-dragging the mouse or by using shift-arrow, shift-ctrl-arrow, shift-end, etc.) and delete them. The process for including multiple quotes is similar: you can highlight the quote in your post, copy it to a new location, delete the text, and replace it with text you copy directly from another post (by scrolling the screen down to the original thread, or from another window). Then edit the poster's name and the time and date of the post.
Edit: of course, editing a quote makes the entire process suspect - you can alter someone's original words, or fabricate an entirely fictitious post...
