Gather near and I will tell of a special cheese dish I saw during my campaign in Gaul.

Fill an open topped glaze fired earthen bowl with cubed soft cheeses a bit of milk, a touch of herbs and spices. Place that bowl within a larger bowl partially filled with water. Position the whole thing close to a fire so that the water boils and indirectly heats the cheese mixture. Watch occasonally re-filling the outer bowl with water as required to avoid boiling dry.

Meanwhile cut some day old bread into thumb size cubes.

When the cheese melts, remove the inner bowl and place in the center of your great table.

Pierce bread cubes with your dagger and dip into the melted cheese mixture and enjoy.

The Goths call this a "fondue"

It goes well with white wine, speaking of which, a glass of reichling for all
