Because, being wise, hemoglobin prefers alcohol to oxygen. So it gloms onto the booze and ignors the air. The next thing you know, your brain is into oxygen stavation.

You get the same effect if you lock yourself in a refrigerator and breathe until the air runs out. It's really quite amusing; try it sometime.
