When I was in Korea the local restaurants served the chicken version with a slice of cheese melting across the top. You then stirred the cheese in, which reinforced the broth. To this day I still eat it that way, and my kids have started doing this with their ramen as well.

Cold ramen is the bomb as well, particularly in the summertime. Had reimen yesterday and it was excellent, but I still prefer hiyashi chuka.

Eight isn't bad.

You can always eat it cold. It's not quite soba, but still pretty good, esp. if you add a touch of sesame oil.
