Starchild's top faves:
Chinese. Mmmmmmmm. Spicy Schezhuan, colourful and varied Cantonese. Hearty Beijing area grub. Steamed buns stuffed with pork. Fried rice. Twice cooked beef simmering in soy sauce. Tea eggs and mooncakes. Dim sum. Peking duck with hoi sin sauce in rice pancakes.
Japanese. So healthy yet so good. Sushi. Sashimi. Yakatori. Miso soup, stick dumplings, and habachi. Sake! 
Vietnamese. Pho. 'nough said.
Indian. Vindaloo, madras, and korma oh my! Somosas, chutney, naan bread, pappadums, roti. Bright red, fiery hot curry that stains the fingers and turns the rice yellow!
Greek. I live off of chicken slovaki wrapped in a hot pita when I'm at work.
British. Don't laugh, but when I'm sick/depressed I long for welsh rabit made by my mum or a hearty roast with yorkshire puddings.

I can relate. 
I love me some good traditional Norwegian cuisine, but I can understand that foreigners don't get all happy and drooling when faced with fish in various stages of decay.
I still love it though, even though I mostly eat rakfisk during Christmas.

Japanese - without doubt. And not just for sushi/sashimi (though you've gotta love fresh salmon sashimi or a spicy tuna roll). I challenge anyone to try the smoked black cod from Kamei Royale in Vancouver, B.C. and try to claim any cuisine has produced something more incredible. The Japanese selection is pretty pedestrian here in NYC, but I can still get my weekly fix of goma-ae, ebi sumitomo and (for the fat lover in all of us) tonkatsu. Makes me hungry just typing about it.
