Can you create stacks of units (instead of moving units invidually)? I can't find any button to does it...

You can move units in stacks by pressing the J button. Every awake unit on that tile will move to where you then click. If you press Ctrl (shift?) -J you will move every awake unit of the highlighted type on that tile. There are buttons to press on the right hand side just above the box at the bottom.
Very useful for seperating your attack units out of a defensive stack. You can even ctrl-J your offensive units to attack and they will do so one after the other.
You need ptw or c3c do do this though.

when I had a stack of 10 spearmen to attack a city, they fought one at a time and not all at once...is this supposed to happen? (I captured the city, though)

Yeah, they attack one after the other individually. Its useful if you know you are going to throw all those troops at the city anyway, or in multiplayer as the other person doesnt get time to move more units in between attacks.

Can you get the stacks to do other things in the same nice order as J for movement (and attack)?
My roving gangs of dozens of artillery riding the railroads taking potshots at AI incursions are slowly wearing out my B button.
