Why can't you save the game in a multiplayer game? I know that in games like Alpha Centauri you could.

I didn't even think the host could, says in the book no saves, I will check it again when I get home.

Can I get something clarified here? If the host saves the MP game data, how do the other players rejoin the LAN game later?

You go all the way to the host screen. In the second drop down box from the top in the left panel you see "Standard", you chose "Load game" instead.
It's the same box you can choose Tournament in if you want to be certain that it plays with the default rules. As well as where you chose a scenario if you'd like to play that.
