Letter to Mina Harker, 28th day of March 1854
My dearest Mina,
Words would fail me where I to attempt the description of today's events to you, and I fear the details would also certainly offend your feminine sensibilites, but I feel compelled to share this news with you so I must write on. The residents of this place met together today with the sole aim of seeing one of thier own number chosen by lot and then killed in the most brutal fashion.
In full disregard of both the sancity of human life, and the very likely possibility that the servant merely fell to his death, this case was treated with the greatest suspicion by the occupants and the servants of the castle. Most curious of all were the habits of some lower class of servants who muttering to each other and frequently making the sign of the cross over thier chests, placed flowers in the mouth of the dead servant. I could get no explaination from them for this behavior, try as I might.
The votes were cast publically, and with a certain amount of eagerness to see someone else chosen rather than theirselves, many simply voted for the same character as his companions did. In the local dialect this is called "Docpiling" although noone was prepared to explain this term to me.
The butler to his Lordship, a tall gentleman with curled hair called Zopperoni, was chosen as the guilty party, and was taken outside where he was put to death. I must not flinch away from the details. While he was still alive, a wooden pole or stake was hammered into his chest, and then the woodsman beheaded him with an axe. The castle's cooks then took his body to the ovens where he was cremated. I asked the priest why he did not receive a Christian burial, and was answered only with a dark look.
I feel I must leave this place, interested as I am to learn more of the secrets of this castle, and to discover if your father's stories are true. I have ordered a carriage to take me to the railway station in the morning and hope soon to return to you in the city.
Yours in all faithfullness
Jamski van Helsing Esq.
It is now night once more

Except that you'll kill him anyway, just for kicks (assuming it's Flipside).

Thankyou
A note found in the handwriting of GhengisFarb
(Dated March 1854)
...so if I mix together the colours Carmine and Oxide Yellow, I create a deadly orange coloured poison. Noone will suspect me of being a killer, but will blame the kitchen staff...
(Some text is unreadable)
...but can I be bothered with the killing? Why am I making these notes? If someone were to find them, by God, they'd probably poison me too...
From the Diary of Jamski van Helsing Esq.
28th of March 1854, Apolyton Mansion :
Yet more death today in the castle. The local artist was discovered in his studio, an adapted glasshouse in the grounds. He appears to have committed suicide by drinking his own paint, but my host, the Duke, who knew the painter well, assures me that GhengisFarb would never kill himself. Foul play is expected once more, and the residents of this dark place will once more gather to cast their gruesome lottery. I shall attempt to leave at once, I feel it would be bad for my health to stay a moment longer in this castle.
Notice at Apolytown Railway Station
Esteemed customers and patrons of the Apolyton Valley Railway
It is with the deepest regret that we must inform you that due to circumstances beyond our control, there will be no trains running from this station untill further notice
Orders for General Ludd, March 26th 1854
...You are requested by the Ministry of Defense to mobilise the milita in the valley of Apolytown as of the now with the express purpose of the defending of the said location against possible revolutionary action from Radical dissidents in the area. The railway line has been detonated approx. 14 miles from the village, and we will send reenforcements when it is repaired...
It is now day, and the voting may commence

I still think that Jamski is the stabber
but he can't be the poisoner (I think, he was going to the railway station??)
I think that doc is the poisoner

Ghengis Farb was afraid that someone could find his notes, so maybe someone found them. What would be the reason to kill him then?
