I disagree with you. From the first movies we know little about the Old Republic, the Clone Wars, and how the main characters participated in them. Yes we do know a few hard fact, the Jedi's used to be the protectors of the galaxies, but a young Jedi named Darth Vader turned to the dark side and help wipe out the Jedi. We know that Obi Wan taught that Jedi. We know that Anakin was a great pilot during the Clone Wars. Obviously from ANH we know that the Empire replaced the Old Republic. Yes it turns out that Anakin is also Darth vader, and that he's Luke's father (and Leiah's too), but we don't really know much more than that. So there is (well was) a wide unknown expanse of creative freedom that Lucas could have tapped into to get three great stories. I don't think knowing the eventual outcome has to hurt the story. Think of Memento where we start out with a murder at the first of the story, and then work backwards from their finding out all of the details. Of all of the important things Lucas could have focused on in the first movie he choose a pod race. If the phantom menace was like a christmas special part 2 instead of the first of the original trilogy I wouldn't have minded. Sadly that wasn't the case.

Um... that's quite a bit of knowledge right there . Much more than you'd know from other movies. And of course knowing the eventual outcome hurts the story! Especially when Star Wars isn't really that famous for having good dialogue or acting, etc (like Memento had). It has good special effects, yeah. The best part of the entire Star Wars series was the shock that Vader was Luke's father. The 'shocking' moments that made ESB the best movie can't really be done when you know what everything is leading to and what will happen.
Now if Star Wars was about dialogue and character development, etc, then perhaps it wouldn't matter, but it isn't and so it does.
It's also a reason that RotJ suffers. You basically know what's coming, except for the sweet deposing of the Emperor by Vader (while AotC had the Yoda fight). It's like the Rocky II syndrome. Though it was a kick ass lightsaber fight.

anyways I'm reading all the spoilers. I'll never see this in the theaters, so I might as well.
edit: after reading the spoilers I learn Anakin turns into Darth Vader!!! OMFG!! I never saw it coming.
