Is there any way to change my Civ Color on single player? I am sick of being blue all the time. Also how do I play other maps?!?!

By default you cant change it (it's not that bad really)... if you mess around with some of the text files that control variables then you can but i'd advise against it!
As for maps you have to load them as a saved game (if memory serves me right), scenarios are loaded via the scenarios button (huh), although there is some tricky positioning to do with them. Be sure to read the readme on any scenario you have downloaded for more detailed advice.
