The is also a less well written book parodying Star Wars. (can't remember what it was called).
I at least remember reading Lord of the Rings and even watching the animated version *pauses and looks around, checking to see if he accidentally offended any Tolkien devotees* 
As for that a star wars parody, its probably not what your trying to think of but there's always Mel Brooks' movie version, Spaceballs
