My (painful) experience indicates that terrain does not influence dogfights. But I am not 100% sure.

Yes, the defender's terrain does count for aerial battles, irregardless of the defender's domain type: land, sea, or air.
It's hard to tell in a regular game but in some scenarios I've played, it becomes obvious. The bad news is that the AI only seems to understand terrain advantge for land units. For example, although the AI always chooses the shortest route, it seems smart enough to move a land unit to the terrain with the best defense, given a choice. AI air units, on the other hand, seem to pay no attention at all to terrain.
