I don't know if I know ALL the hotkeys, or if there are more I need to discover, but so far it seems that:
1. Hitting the "A" key when the worker is blinking move-ready will send him out to do whatever the AI thinks is best. Unfortunately, "best" sometimes means turning the irrigation in your population centers to mines. The governor LOVES mines and doesn't care if you're trying to prime the population pump.
2. Hitting "Shift-A" is better. It will send the worker out to so what the AI thinks is best - but only on tiles that currently have no improvement. He won't mess with anything you've already built. I'm not sure, but I think workers acting under "Shift-A" WILL turn roads into railroads if they get the chance, but otherwise they leave mines, fortresses, and irrigation alone.
3. Hitting "Shift-P" puts them on pollution duty. Since workers can pool their efforts, having a lot of workers on stand-by pollution duty keeps the board nice and clean. 3 Workers jumping onto a pollution tile will almost always clean it up in a single turn.
Those are the only automation keys I've figured out so far.
