Within the first five minutes, I turned off the music in every game I own, or ever owned, and play without music.
The only exception to this is Quake II, where the music actually seemed to belong in the game somehow.
The music in CivIII should be dealt with by the Geneva Convention. I could castrate a cat by making him listen to the music for a couple of hours.

Check out audio preferences, Shift S. In this you can turn off the music whilst still having sound effects.

I am opposed to using movie music, just because it usually pales in comparison to "real" classical music, but here are my suggestions anyways...
Ancient:
Gladiator - The Wheat
The Mission - Gabriel's Oboe
Medieval:
Last of the Mohicans- The Hunt
Last Emporer - Theme
English Patient - The English Patient
Glory - Theme
Dances with Wolves - Theme
Orff - Carmina Burana
Industiral:
Hunt for Red October - Hymn
Crimson Tide - Theme
The Rock - Theme
I think that Black Hawke Down will have a great soundtrack, perhaps for the Modern Era, though I'm not sure exactly what that should sound like.
