For UU maybe a Mounted Warrior/Rider combination or Jag Warrior/Mounted warrior combo (really powerful for early game, cripple a civ early on and then finish them off, move on to the next civ). As for traits I'd pick - Industrious, Religious, Militaristic. Quick terrain improvements, lots of Jag and Mounted Warrior promotions and leaders, quick anarchy, cheap temples, warrior code=quicker Mounted Warriors (actually if I could choose I'd take the wheel instead). An unbeatable combination, I'd say.

militaristic, religious and industrious.
Jag Warrior and Immortal.
With this setup, no matter the map size or civs, I should be able to conquer a enormous swath of land early and all nearby civs. Then be able to hold the fort.

Immortals + Panzers
Rapid infrastructure, and good technology backed up by powerful offensive units for when I do the most fighting (early Ancient and middle Industrial age).

Can't do without religious, a definite must have for the low anarchy, flexible governments and culture/happiness reasons.
Militaristic is perhaps the best trait for 'fun playing': occasional decisive warring is very important in CIV3, extra elites generate extra leaders generate extra wonders, etc . Do YOU want to miss out on this feature?
I do like industrious a lot! But is the trait THAT unique? No! Captured workers, which won't cost you gold, will have to do the job. No probs with militaristic.
Commercial IS unique. It allowes you to become succesfully LARGER, well matching to your militaristic trait. Commercial in combination with religious also provides you cultural flip over options. Main importance of commercial? Less corruption: MORE SHIELDS and INCOME, better developping distant cities than the civ's distant cities (more than this meager one shield production).
Scientific wouldn't be worse neither: culture + three techs.
With my three traits my civ would be a major contender.
To secure my cities from the very beginning I take HOPLITES as UU1. Much later on, when you want to establish a definite winning position, PANZERS, will do the job of expansion and 'claiming disputes and fighting terrorism' around the globe.
Try and beat me.
Let's have these Jag armies get themselves defeated by my fierce Spartan defenders, and killed by ALEXANDER's reservist horsemen! Our walled cities will hold of Roman legionaries and Persian immortals during Ancient Era. Hoplites will stand throughout Medieaval Era as well, if enough numbers to defend from chivalry attack.
My civ will become properly culturized and later on a rich tech leader. Who dares to interfere may expect the Modern Military to react FAST and DECISIVE: PANZERS will move in and blitz, government turn to be a Napoleontic warmongering Republic.
When the dust settles afterwards, I will be the leader in all directions. I'll have massive military and will be first to launch, that is if you are allowed to watch ... (nice guy though, but better don't mess with me or else ...)

Man-of-war and F15.
I'll be poor anyway cause I have to pay full price for buildings. I'll know where everything, and I'll have built roads everywhere, but I'll prolly have, oh, about 4 cities.
I will, however, rule the seas and the air!!

It seems commercial, scientific, industrious would be a potent combo. UUs would be Samurai and Panzer, for no particular reason.

Gotta be religious. Gotta be militaristic.
Third? Science doesn;t do it for me, as I deal with tech in other ways ("ATTECH"!!!), although it helps on culture.
Prob industrious, for roads / RRs, mining, and just in case I have to deal with a major jungle or forest. Heck, I'd like to go back to terraforming.
As to UUs, which one triggers the GA? (or do we get 2!!)
I'm sold on WCs, for earliest fast-mover war possible, and Panzers for world domination.

I'd take the Legions of Rome and the Riders of China.
Find all the goodies and tech, settle and build up the road network and then spank everyone silly until Nationalism comes. :-)
