That seems like your deck isn't fast enough. Concentrate on making it faster. That way he can't counter everything you throw on the table, esp when he is at least blue/black.
If you can bring out one to two critters a turn, he'd sweating.
Another thing to think of is Armmageddon.
If you want, set up a control deck of your own. These expensive spells are particularly vulnerable to power spikes.
Still, the Haunting Echo cards seem to be a bit overpowered.
