If you just put the pieces that have been revealed through previews together, you will get a pretty good picture of what the Harvesters are.

Here is what Prima's official strategy guide has to say about the Ithkul in "Chapter 2:Alien Races". For those that don't have the guide I hope this sheds some light. However I must point out that the strategy guide does not have a picture of the Ithkul. Interesting.
"Ithkul
Genetically engineered as parasites to destroy the other races in the Orion sector, the Ithkul made some unexpected evolutionary leaps and took matters into their own "hands". Thinking for themselves, the sole harvester race in the game absorbed knowledge and philosophy from their enlightened hosts and leapfrogged their civilization to suddenly overtake the others. Borrowing a little bit from everywhere, the Ithkul choose to lean toward self-sufficiency rather than rely on cooperation or conquest of the other races.
The Ithkul are loaded. They have the highest overall stats, they arguably have the best military, and their economy can rival the Cynoids'. One glaring weakness keeps them off the top spot - trade (cynoid are the 'best').
The Ithkul "consume" other living creatures in addition to their bioharvesting activities (they get 10 food for each population point they consume). Planets with Ithkul and another race will notice a larger then normal number of your populatoin points disappearing. Harvesters are not nice; that's why everyone hates and fears them. Unfortunately, playing nice with them often isn't sufficient. They're prone to declare war at any time, and don't pay alot of attention to diplomatic offers, though they've been known to stay nice for a while if the price is high enough.
STRENGTHS:
Superior bioharvesting gathers the goods, and then superior Manufacturing makes you more money than you can imagine. good research supplements the economic advances. A super-powerful military force- with only Accuracy falling below perfect level-can pummel any force that decides the Ithkul are their enemy.
The Ithkul also have two special attributes: Tolerant and Antaran Background. Tolerant reduces the negative effects of pollution by 50% and that drives Bioharvesting into the stratosphere. Antaran Background increases your chance of discovering Antaran technology-one of the game's victory conditions - by 20%. If you can't win throughthe normal channels, the Ithkul have the best opportunity to find the five Antaran X's.
WEAKNESSES:
First, they have a poor rating in the most important trait, Trade. That hurts when you want to work with other races. Second, they have a poor rating in Diplomacy. That kills when you want to work with the other raeces. With all the Ithkul have going for them, they won't be able to realy on the support of the other powers.
DIPLOMATIC TENDENCIES:
You might have to play nice with the Ithkul, especially if they're an immediate neighbor and you dn't want to get attacked early. They are self-reliant, but you may be able to pull a fast one-who's to say they know anything about a good deal with a poor Diplomacy and Trade rating?"
~ so there you have it. Thats what we definitely "know" about the Ithkul. The rest is purely academic. Not that there isn't anything wrong with that.

Alex, this information has been posted here, several times, in various forms and flavors.
It's nothing new. If MarkG or DanQ want to do something about it, they would already have done it.
Besides, what do you have to be bitter about - you already have the friggin manual. 
ETA: Wow. Just wow. Some of you might know what I'm talking about. Others won't. Still, wow.

Obviously there is not a single Moo3 site left which isn't infested by the IGmoo censorship mentality. I think this is too high a price to pay just to keep developers posting in a forum.
This whole harvester thing is nothing but a PR gag, and all the fansites are happy to assist the IG marketing department. I bet the fanboys get a warm fuzzy feeling deep inside now, knowing they have once again been obedient and fulfilled their masters' will. Unfortunately they get fanatical over it, and suppress other people's beliefs much like the Inquisition did. Inquisitors, too, sought to protect poor innocent souls from evil.
I do realize that the fanboys probably act with the best motives, but I don't see why their desire to remain blissfully ignorant should have priority over mine, which is to know as much as possible.
Why is it the fanboys can't just avoid a thread titled "SPOILER!!!" if they don't want to see a spoiler?
If their will is too weak, and they are unable to resist their hidden wish, that only proves that they followed the wrong path in the first place.
After all these years, Usenet is still the only place where you can have a free discussion, unaffected by commercialism, which is quite sad. Of course this is a matter of little importance; after all it's "just" a game we're talking about. Nonetheless, giving in to unjustified censorship requests sheds a bad light on Apolyton's integrity, IMHO.

It's because some people are intolerant. They can respect your opinion only if you wield power. Then they become submissive, but if you don't wield power, they like to exhibit a holier-than-thou attitude and patronize you.
