there's a surprisingly big difference in the price... you can get pork bologna for 99 cents while the same amount of beef bologna costs 1.99...

That's not a big difference - a buck, hell. I spend triple that on a cup of coffee.

But the thing is, the quality of the food is often dependent upon the animal - that is, you want a well fed cow, not one that lays around all day. At least that's my understanding. Could be wrong, though.
