What's your Favorite Pasta Sauce Support Apolyton, buy Galactic Civilizations

I making pasta tonight, from scratch, yes, fresh!

I'm making linguini and just some flat sheets that I use for ravioli, tortolini, tagliatelle, or pappardelle.

I got all the stuff for a tomato based sauce and I have sausage and ground beef so I could make a bolognese or a ragu if I wanted.

No fresh basil and pine nuts. So if I wanted a pesto I'd have to stop by the store.

Same if I wanted an oil based sauce.

I also like Alfredo, but I don't have enough Parmigiano-reggiano.

My favorite sauce is puttanesca, but that goes better with a heartier noodle like a penne or a rigatoni.

Anyway.

What's your favorite sauce?

Tomato is pretty much basic for pasta, although my personal favorite is tomato sauce with vodka added into it(look for vodka sauce in the supermarket). Now that is excellent..

My wife likes artichokes in her tomato sauce, it's not bad... Maybe tomato sauce with artichoke and vodka?

Never tried squash, though I have made butternut squash raviolies

With real Pancetta or thick cut Niman Ranch bacon, real cream, real eggs, and fresh thyme. (for fun, put some fresh grated nutmeg on top)

Over all I like alfredo the best though pesto comes in a close second. I also like the soy & spicy peanut oil sauce that one of the Euro Asian bistros by my house makes.

She isn't very good at the finesse side of cooking. She needs to stick to chicken bakes and soups... Though she can make pretty good pies, and her bread ain't that bad, but the she uses the bread machine.

semolina (looked up the spelling)

It's a flour type. Best used when making eggless pasta, which I make for my dad who is allergic to egg.

I created the best pasta sauce I ever tasted yesterday.

In it I put tomatos, red onions, roasted hot peppers, brocolli and freshly ground pepper with goat cheese served on top. Sweet and spicy

My Bolognese:

Olive oil in a pot, chop an onion, sauté until golden, add ground beef, salt, pepper. Steam 5 large tomatoes, peel, chop and add to the meat. Add one small can of concentrated tomato purée. Pour in about 3/4 of a pint vegetable stock and season (I use basil and nutmeg). Cook on low heat for about 30 mins. Add mushrooms (preferably fresh, but canned will do if you want to lowball it). Serve with your favourite pasta, and don't forget to grate some parmesan to go with it.

I have tried it with squash, artichoke, and mushroom at different times and all were ok. Of those three mushrooms felt most complimentry to the pasta. Believe it or not a quality vodka actually adds a TON of flavor to a pasta sauce; I guess it works along the same idea as putting wine or beer in a recipe. Trader Joe's makes a great vodka sauce which is wonderful on just about any pasta.

I'm not a big fan of Bolognese, I prefer sausage to ground beef. My favorite is carbonara, but it's expensive to make well.

pancetta, prosciutto, pecorino romano, eggs, italian parsley, olive oil, white wine, garlic, and crushed red pepper. Buon appetito.

Pastas made... Making sauce. I think the best sauce with Fetticinni is Alfredo with carrots and brocolli... (My trick; I saute about 6 cloves of garlic, halved in the a little butter then remove the garlic before adding the cream, rest of butter and cheese)

That Bolognese sounds good, I will try it one day.

I like walnut pesto, spinach and goat's cheese sauce, arrabbiata, and yesterday I had octopus with garlic, chili, oilve oil, butter, garden peas and capers on spaghettini.

I prefer fish or vegetable sauces with pasta, but I do like a rich meaty ragu from time to time.

Porcini with roast almonds, rocket, cream and white pepper is tasty too.

You can make really good cheap carbonara with just a raw egg yolk, some crispy fried bacon, cheap parmesan substitute and black pepper.
