I don't get the "Day"/"Night" thing. When is it "day" and when is it "night"?

Round - 1 -
It was still early when chief Skanky entered the town square, God how he hated Mondays;
still just one early shift a week wasn't all that bad.
No-one was awake at this time in the morning, after all
the PC hadn’t been invented yet, let alone the internet,
nope, it was just him, just him and the baker of course.
Hmmm, he could already taste the fresh, delicious bread.
He crossed the square to where the bakery was located
and knocked on the door, softly at first but increasingly louder. No, no not again...Ever since flipsides’ wife had left him
a couple of months ago, the baker had overslept on a couple of occasions or had even fallen asleep while working.
flipside really worked too hard, the whole town felt sorry for him, so no-one so far has complained about it,
still Skanky really had been looking forward eating the ham he got from the butcher yesterday
along with the fresh bread and a good cup of very hot coffee.
Then the chief started realising something strange but he couldn't really put his finger on it...that's it!!!!!
He couldn't smell anything...that was kind of strange. Skanky surely hoped the flipside hadn’t done anything stupid
after all he was getting more depressed with every passing week.
Maybe he had an accident and wasn't able to call out for help.
The chief contemplated the issue at hand for a couple of seconds then as he was a man of action and not of words,
he used his whole body to get the door open and fell with it right inside the shop!! The door wasn't even locked!!!!
This in itself wasn't that strange, many people left their door unlocked, even at night.
It was a peaceful town. But unlike other people the baker had always! locked his,
flipside wasn't the nicest of men and many weren't surprised his wife had left him, in fact many said she should have done so sooner.
He walked to the back where the baker lived but couldn't see his hand in front of his eyes.
The light switch didn't help either so the electricity must have been out.
Luckily the chief always carried a torch, he aimed it at the table and as soon as his eyes got used to the light he could see it.
There he was, flipside was lying on the table with a plastic bag over his head,
all his fingers were grossly removed and the look on flipsides was one of pure horror and pain.
The chief could feel his stomach turn, what the hell has happened here?
Skanky turned the baker on his side and there he could see it, a note.
With a short pull he removed the red blooded paper and tried to read it,
the chief started shivering and his leg went numb...all the note said was...M A F I A.....
It's now day...

I get that, but I don't understand how long those time-frames are, i.e. when do "day" and "night" start and end?

The turqoise-black combination is ugly, but the killer is the dark-green black comibation. Change it now.
