As humans, we naturally gravitate to "getting in a rut" - otherwise known as embracing the predictable. On the most simplistic level, you drive the same route to work, park in the same area of the parking lot, listen to the same radio stations on the way, etc etc. To do something different takes real effort - and the same is true of relationships.
The good thing is you don't have to be completely off the wall. As an example, I usually don't call my girlfriend - she has to be the one to call me. But every now and then - even for a few days in a row - I'll call in the middle of the work day just to say hello. It completely floors her because it's so atypical. But if I did this EVERY day - well, it would be predictable, expected, and ultimately bothersome.
I don't want to beat this to death, but you have to play hard to get - and as men this is VERY tough to do. Some examples:
1) Every now and then, even if you CAN go out on Friday, tell her you can't make it.
2) If you suggest a date and SHE can't fit it into her schedule, do NOT suggest an alternative. Leave the ball in her court and if she wants you she'll come back.
3) Do NOT tell her your life story, because again, there goes the mystery (and don't worry, she'll be happy to tell you hers.)
This may sound like game playing, but in the end you'll both be happier - trust me.
