1. the netcode sucks compared to say Counter-Strike(QW based netcode baby!), Quake or Unreal games.
2. bugs, balance, maps, etc.
3. it's not quake

1. Yes, the netcode sucks.
2. There are no really annoying multiplayer bugs. People have taken the SP game apart and done all sorts of buggy stuff, though. The balance is extremely good between the weapons in SP, but that balance falls apart in MP. The Pistol, Shotgun, Sniper Rifle, and Rocket Launcher are far superior to the four second class weapons. (For the PC version, they added two more weapons, both of which are annoying and require no skill)
3. Doom isn't Quake either.

Do you like Halo a lot(maybe even a fanboy?) and not so much other FPS games? |
It's still a good deal behind Half-life in SP, and behind a lot of games in MP because of the netcode and balancing issues.

From my perspective, here are the problems with Halo mulitplayer...
#1 - Sniping weapons are horribly overpowered -
You can run around while you are zoomed in. This might not be so bad if the master chief didn't run so damn slow. It is impossible to get out of the way of a pistol in an open area. The game ends up becoming who can shoot who faster, instead of using tactics.
#2 - You're guy is a snail -
I touched on this in number 1, but let me say it again. An elderly woman with crutches could keep up with the Master Chief in a foot race. Damn he moves slow.
Those are the 2 reasons that Halo multiplayer is not that great. I find that CTF games in Halo are much much better than standard DM games. It's also much better to play with at least some vehicles (though not tanks) and with sniping weapons disabled. Also, anyone who plays with radar turned on is a tool. Radar sucks... nav points are ok, but radar sucks.
There are a few bugs, though none are too terrible. I don't think any of the bugs, except this first one hurt gameplay at all honestly. Here's the ones I've found.
Gun Fires Sideways - this is really only noticeable when you are playing with rockets. If you jump and take splash damage from a rocket, you cannot turn in the air and fire... well, technically you can turn and fire, but the rocket your trying to fire won't go the same direction you are facing. It will fire in the direction you were facing when you jumped. This one is pretty annoying.
Using Vehicles to Jump Through Walls - the game isn't the best at handling getting in and out of vehicles. You can jump right through most walls by getting out of a warthog or ghost, provided that the seat is touching the wall. Same for getting in. This is a pretty cool trick to use in Sidewinder CTF, since you can park a ghost on the other side of the powerups in that tunnel, then hop right through the wall to get in.
Warthog Gunner Launch - I don't even think this is a bug really. I think it's great! You can launch the gunner of a warthog about 20-30 feet straight up in the air while driving. Have him face backwards and look straight up, then have him get out while you are driving at full speed. The gun will slingshot him way up.
Getting On Top of Levels - self explanitory. I got yelled at quite a bit in a CTF game on Sidewinder. Both teams had the flag, but both were having trouble returning their own so my buddy (who had the flag) and I decided to use the warthog to launch him out of the level. He then went and got a soda, taunted the other team, then casually dropped into the base when we returned our flag to score.

Tranjus you should watch some QW demos though they might confuse you. I'm not sure if you will have all the maps to watch them though but you should with eQuake. There is a lot of spawn killing going on but it's much deeper than that. A lot players are too aggressive and would rather attack and die with 20 health than run away and survive(letting them heal up).
http://qwwc.quakeworld.nu/demos/ - enjoyed the Germany vs North America games a lot. All you should have to do is download the demo file unzip it to /quake/qw/ then fire up eQuake and either find the demo player in the menu or type "playdemo demoname.mvd" in the console(~ brings down console). If you are going to use playdemo usually it's best to rename them to something easy to remember like 1.mvd.
