That doesn't make a model invalid. It makes it limited. To simply wave your hand and say, "Well, all human understanding is limited and therefore invalid," renders us unable to know anything. One might as well try to walk through walls since our understnading is limited and we might just be wrong.
A model is valid if it describes, more or less accurately, the way reality works. Sooner or later, we'll have better models, but right now, these models are the ones that match the data, and that makes them valid.
