For instance, to say that Chrisitianity is the one and only religion on the planet despite, say, Hinduism being an established religion with millions of followers, wouldn't that be conceived as arrogance?

Well, why join a religion unless you believe it to be more true than the others? It's not arrogance, rather sincerity. The folks who believe all religions are the same, are most likely not to belong to any of them.

My point is that if all religions preach peace and civility towards one another, isn't that what the Creator intended?

Indeed. One of the things I find particularly outstanding about Christianity, is how explicitly, we are called to love those who do not love us.

The crux for me is that as a species, we evolved with religon helping us through most of that process. Look around the world today, see all the remarkable(and mostly religious) things that our anscestors have left behind them. A huge effort of work for something an atheist will not be able to comprehend.
The belief that man has had in these religions over the millenia has led us to where we are today. The non believer is a very recent part of the human condition, and for many people it will take more time before we can be comfortable with the notion.
we are just evolved monkeys, with our animalism just a few scrapes from the surface. Religion could be said to be a big part of what has made us human?
