I'd love to drive down Route 66, and I beleive it goes through the North end of Texas too. I'll just need to find out details about car insurance and hiring.
Thanks for all the advice so far, and please keep it coming. I wanna learn as much as I can about America from as I am completely naive of it's culture, people, places etc...

Route 66 passes thru the Nortwestern part of Texas. I drove there a couple of years ago, but don't remember anything special from Texas. Amarillo is a cool name. I think the area was desertlike. I like the desert.
Remember when you ask the car-rental for a price they're likely to give you half the sum and when you come to return the car you get a shock. They 'forgot' to tell you all about fees, insurance, etc. This happened to me once. I rented a car from Avis in Chicago and the sour woman told me I had to pay $189 for one week. When I called on the phone from Pittsburgh the price had just gone up to $400.
Ask for an estimate for the total price.
My favorite motel chain is super 8. You can get a V.I.P. and get 10% discount.
Driving is great in America, but remember everything looks the same wherever you go. Mostly flat areas and the same chain stores, restaurants, etc. I think it's always an advantage and more fun to be more than 1 person travelling. Denny's has great breakfast menus IMO.

It's more the kind of holiday where I want to go away on my own, meet people and just enjoy a break from crappy England life.

Oh come now, I'd love to try your cooking. I'm sure you're an excellent cook.
And anyone who comes to Austin can shack up at my house for a few days...it's pretty big considering a currently living with my dad - you'll get free alcohol and I'll have a hot tub in the back yard by then, so it'll be kinda nice if you can put up with my dad. OK, strike that, you probably can't, *I* can't
Oh, and I had this idea today, tell me what y'all think.
If Matt ends up in Texas for a few days, I was thinking maybe you could fly into DFW in Dallas, and the two of us, along with whoever else wanted could come, could just road trip around Texas for a while....I'm thinking DFW area-Waco-Austin-New Braunfels-San Antonio-Houston-maybe Corpus Christi.....it might be cool if you are here long enough.
As to restaurants here:
If you like Asian food, and you want a lot of it that's cheap, the very best place I've found is called Kim Phung's, GREAT Vietnamese food IMO.
Then for Mexican food, Chango's is really good, off the UT campus, and several other places.
Let's see, Oasis is OK....view's great!
There's also a place here that brews it's own German beer.....great food, better beer....it's name escapes me right now even though I just ate there....oh yeah, North by Northwest, that's what it's called.

Nice, we should do it then....hmmmm if you have time it'd be great to go to New Orleans too, I have friends who have friends who live there, which means we all might have a place to stay in New Orleans, hehe.
I should warn you, going to all those places I named - just driving there, spending a day or so, would take over a week without even counting New Orleans, so just tell me how long you wanna spend in Texas and I can figure out the best places to go.

Well let's see, if you stay in Texas entirely for two weeks, you'd definitely have a place to stay in Dallas and Austin, and possibly in Houston as well, so that takes care of the big three....Waco I'm sure we wouldn't stay long in, obviously go through, see dm, maybe pick her up take her to a big Austin meet or something, I dunno...San Antonio is close to Austin, maybe an hour and a half away, tops, same with New Braunfels, which we could see in a day. Corpus is a bit of a drive, though.
For those places, you'd definitely have to pay for a hotel in Corpus Christi and San Antonio, and maybe Houston, but splitting a room with 3 or 4 people wouldn't be too expensive, depending on who else we got to come along on this.
New Orleans, if we did that, is a long drive, but I think that'd be OK because you'd get to see a lot of East Texas and Louisiana, and New Orleans itself would be well worth it I think.
Just make sure you come around July 4th, we can have a nice Independence Day BBQ - BBQ the Brit, that is
