You can use the HTML replacements for writing umlauts and other "weird" characters on a website. That's even better than using a key. The key will insert a single-byte character in the range 80..FF (hex), which will be rendered as umlaut or ligature only if the appropriate NLS (Latin-1 or ISO-8859-1) is set. If the browser uses another set, for instance Cyrillic or similar, these characters will be interpreted another way.
Better to use the HTML descriptions for the characters. They will always be rendered as the characters they stand for, or if the browser isn't able to render them properly, it will replace them with other characters, like ä with ae or simple a, or ß with sz or ss.
For the German special characters:
Ä = Ä, Ö = Ö, Ü = Ü, ä = ä, ö = ö, ü = ü, ß = ß.
