Here's one of my Favorite recipes that sounded bad when I looked at it. Then I made it and loved it:
Chicken/Peanut Soup
1.5 cups cubbed peeled sweet potato
0.5 cup chopped onion
0.5 cup diced red bell pepper
2 garlic cloves, minced
1 jalopeno pepper, seeded and minced
2 cups chopped cooked/boiled chicken breast
1 cup salsa
0.5 tsp ground cumin (I always add more )
2 16 ounce cans chicken broth
2 15-16 ounce cans of chicken and rice soup (or two more cups of chicken broth and slightly cooked rice, or you can cook the rice in the soup)
1 can black beans, drained
1/3 cup creamy peanut butter (I use more, add for consistency)
Place a large Dutch Oven coated with cooking spray over medium-high heat until hot. Add sweet potato, onion, bell pepper, garlic, and jalapeno; saute 5 minutes, or until garlic has browned. Stir in chicken and next 5 ingredients (chicken through beans); bring to a boil. Reduce heat; simmer 10 minutes. Add peanut butter, stirring with a whisk; cook 2 minutes...
Yummy!
