"What's eating Toronto sushi lovers who are feeling the long reach of the province's regulatory tentacles now that it has decided that all the fish used in sushi must be frozen first?

The short answer: could be anisakis, eustrongylides, diphyllobothorium or other nematodes.

To find out more about these sushi garnishes that are not on the menu, we visited the Web site of Tokyo's Meguro Parasite Museum, which prides itself on a diphyllobothorium specimen — a tapeworm — that is eight metres long.

The museum also features a parasite of the month. In March, 1996, the winner was anisakis, a worm that is "a major health hazard associated with the eating of raw fish."

The disease it causes, anisakiasis, is not confined to Japan but is showing up in other countries where people like eating sushi or sashimi.

In a 1994 study conducted by the U.S. Food and Drug Administration, researchers found that in 32 Seattle sushi restaurants it sampled, 10 per cent of the salmon contained parasites. The risk of disease may not be as small as many people think.

There is still a chance — unless the sushi has been frozen — that these worms will bite back."

What about it?

I've eaten sushi for years now, or at least in the periods of my life where I could afford it. I've never had a parasite infection, and even if I had, sure it would be disgusting, but it's not like a tapeworm or two would actually kill you.

Actually I haven't eaten anything today apart from the massive sushi box I bought at the supermarket, and I still feel great - like if sushi and myself were meant to be together.

eh, i'm asian. i'm already at a higher risk for hep b, though i think i'm vaccinated against it. and with the miracle of modern medicine, i think that even if i got any parasites, i may eventually be able to lead a normal life.

I am not sure about the "easily digestible" part. Cooked meat generally is easier to digest than raw meat.

Its horrible to freeze the fish used in sushi first.....it will no longer taste as fresh....

Wasabi isn't spicy at all. Its not even hot. Its just very very bitter and nauseous. I remember when I ate it, I ate a whole scoop of it because it looked like mint ice cream.

I like spicy things, sambal belacan for example, but wasabi isn't really a spicy condiment, just bitter and sour.

And the study, it was conducted ten years ago....

Ya gotta do it Korean style. Get a big platter of thin slices of raw fish (no goddam rice!) and dunk the slices in a bowl if hot chili paste with a bit of wasabi mixed in.

I love sushi and especially sashami (and it is all about the wasabi).

I recently visted California, and went to what was basically an authentic Tokyo pub in Santa Monica, and found out that there was so much more to Japanese food, though. F'r instance, there was this incredibly magnificent pork belly. It was so tender, I was able to tear away strips with chop sticks, and it tasted bloody amazing.

What don't kill ya makes ya stronger... though most of the sushi I eat is vegetarian. Raw fish costs too much, and Central Kitchen (the place where our co-op gets its food) doesn't stock it.

I love living in Seoul. At the fishmarket by the river you can buy good-sized live fish for as little as $13ish and they slice em up for you. Then you just gotta get some chili paste to dunk it in and you've got a full meal of nothing but raw fish for damn cheap

Stupid California rolls, what's the point of eating sushi if there's no raw fish? Get rid of the rice, its a waste of space and eat pure raw fish.
