Did they CHOOSE one side over another or did they continue to be bi but simply fall in love with a person and maintain a monogomous relationship?
To me a person could be in this situation and still not have a settled preference as to the gender they are attracted to . .

Denial is tough to accept since she is "out" with her relationship with all her family and friends. She actually doesn't call herself "gay" or "bi" -- all she knows is who she loves and that she is very happy.
Straight and in a homosexual relationship doesn't sound right either. It sounds as if she doesn't enjoy sex now or something while she has said basically that "sex with someone you really love is something special"
Will she hanker for some muscular man at some point? maybe . . . but how is that much different from the hetero man hankering after the youger or bigger boobed lady? I think everyone is attracted to other people from time to time

no, they came out as one or the other (often gay)
and the next relationship was with the same sex again...
I have never talked to a person who convinced me that they had no gender preference... (without that convincing be destroyed by them coming out straight or gay some time later)
in your example she (if you beleive her) obviously has a straight preference... but 2 and 3 (and for 3 I gave references to people that you are in love with but don't generally have sex with..) are with this other woman
if she has a straight preference then she is straight
if I had to have sex with the person I loved most, right now, I would have sex with a guy
I am attracted to women though, and would prefer to wait and find one that is right for me

Sounds like you are somewhat effeminate but that no way means you are gay-- Some of the more "feminine" guys I know used to get laid more than anybody . .
Simple gay test-- have you EVER felt attracted to a man? have you ever started to get aroused from seeing a naked man?
If no-- you are straight

um... was my post not clear?
I said that physical aspect was different then the attraction factor (Where sexuality enters in)
she obvious has 2 and 3..
that is not enough for most/all people to be satisfied..
