How soon can we divert 3 or 4 chariots to sack d'ville? They are probably just streaming in warriors for the upgrade there.

WRT attacking with a healthy Medieval vs. Immortals....I'm on the fence, but my gut would be this:
IF the Medievals are positioned such that for some reason, they would be unable to attack the enemy next turn (ie - if we don't attack this turn, we lose the position to do so immediately--should be rare on our own turf, with the advantage of roads--then I would say go for it with gusto.
If, however, we can reach out and touch them whatever they do next turn, and given the current state of our defense (nothing can be overrun this turn), I would say it's not worth the risk. Let's see how they decide to play it....in waiting, we are sure to be presented with a better target of opportunity than an Immortal in the mountains. Better opportunity....easier kill.
I look at it like this.....*they're* the ones in a hurry....they're the ones on a timetable. The longer the war drags out, the more punishing our production advantage becomes.
Since we're not in a hurry, why attack when they are in terrain unfavorable to us? Of course, they cannot be allowed to remain there indefinitely, and should they choose to try, then we should strike them, mountains or no....but when we do, let's take the whole hog.....when we attack a stack, let's not leave any survivors, and if that's not doable, then let's certainly not let them live beyond the very next turn.
